Oven-roasted lamb with potatoes

Ingredients

1.2 kg of lamb broken into large pieces

1 dl white wine

1 teaspoon salt

1 teaspoon sweet paprika

1.2 dl. ZANGARIA extra virgin olive oil

5 cloves of garlic

rosemary

thyme

2 bay leaves

400 gr onion

200 gr gripe tomatoes

500 gr small potatoes for roasting

400 gr carrots

Description

  1. In a bowl, mix the white wine, salt, paprika, olive oil, crushed garlic cloves, a sprig of rosemary and thyme (set some aside) and bay leaves.
  2. Mix well and add the diced onion and tomato. Place the lamb in an earthenware dish, arrange the peeled potatoes and sliced carrot and drizzle everything with the mixture.
  3. Leave to marinate for about 24 hours.
  4. Preheat the oven to 150° C and roast the lamb in the pan for about 30 minutes. Turn the meat over and roast for another 30 minutes at 180° C. Before serving, sprinkle with the rest of the thyme.
